My morning!

  • 2 large eggs
  • 2 sliced shiitake mushrooms
  • One slice of goat cheese
  • Drizzle of sesame oil
  • Whole wheat English muffin
  • Half avocado
  • A medium banana

I started by heating up my sesame oil and while that was getting hot I sliced up my mushrooms. I added those in the pan, stirring to evenly coat the mushrooms. Now I only used a tiny bit of oil. Just enough to give that delicious sesame flavor.

When my mushrooms are cooked I scoot them to the top of the pan. I then add in my two eggs and give them a good swirling in the pan. Why dirty another dish to mix them up in?

While my eggs are cooking I put my English muffins in the toaster and cut my avocado in half.

Once the eggs are cooked most of the way I go ahead and mix the mushrooms in and then break up my slice of goat cheese on top and mix that until it’s nice and melty.

Get my English muffin out of the toaster and spread my avocado on each slice with a pinch of salt on top and tada!!!! Breakfast is served.

Usually during the week when I wake up at 4am for work I just make two eggs and either a whole wheat English muffin or Thomas’ double protein oatmeal with cinnamon English muffin with peanut butter.  I’m not much for cinnamon but the taste is so light that it doesn’t bother me and it tastes great with peanut butter!
My plans for the day- btw it’s leg day!

  1. Clean up my room
  2. Laundry
  3. Go for a run as my cardio
  4. Weight train
  5. Lunch
  6. Do some gardening
  7. See where the day takes me

I do have a Snapchat and an Instagram if you want to follow me on those.

Chia and Flax seed pudding for breakfast, yes please!!

Good morning everyone!!!! Yes, I woke up around 10am, but oh well. For breakfast I ate chia and flax seed pudding made with vanilla soy milk and a handful of blackberries! The store had them on sale for $1.00 per package. So, yes i bought 4 packages! Yum. I love a good sale!

If you haven’t ever tried it, it’s delicious! You can make it many different ways!

What you need:

  • Resealable container
  • Soy milk/ Almond Milk/ some other kind of milk or yummy liquid
  • Chia seeds
  • Ground flax seeds
  • Fruit/ toppings/ unsweetened cocoa powder

Mix about a cup of your soy milk with about two tablespoons of your chia seeds and however much flax you want. The more chia you put in the thicker it will become. The less you put in, the soupier it will be. I like mine super thick!! Mine came in a pre-mixed bag so I just did two tablespoons. Mix for a few minutes or put the lid on and shake it for a few minutes. Put it into the refrigerator and check on it in about an hour and give it a good stir. If you don’t give it an additional stir, it will get stuck on the bottom. Once you see that it is thickened up, there’s no need to stir it anymore. Stick it in the refrigerator and in the morning add your fruit or whatever toppings you want and enjoy!!
